Temperature is in the 100s all week 🌡 🥵. It is to hot to cook, but I get sick of the boring ol sandwiches. What are some “hot weather” dinner ideas? Or dinners that can be made in a crockpot?

  1. I pan sauté a large package chicken tenders seasoned to taste 4 minutes per side. Makes good soft tacos or cut up on salad or shredded for chicken salad.

  3. Mexican chicken. Super easy. Boneless chicken breast, taco seasoning, bell peppers and onions, chunky salsa, lime juice, cilantro. Shred it after cook and put on top of nachos and add cheese dip to top.

    Chicken Breasts and 2 cans of Cream of Chicken….The soup makes the sauce …Side with Mashed Potatoes…I buy the Hormel microwave Potatoes in the Dairy section and add a vegetable or salad…Easy peasy

  5. I did a couple meatloaf’s on the grill last night so tonight is leftovers…plan to do a pork roast in the crockpot and then “re-do” as shredded pork sandwich or nachos later in the week….. also plan on skillet cooking a couple frozen flounder……

  6. Bought a rotisserie chicken and nice rolls so chicken sandwiches tonight . Next take pieces of chicken and warm up in white cheese sauce (garlic Parmesan)while making a pound of pasta and a pkg if frozen vegetables mix vegetables in the sauce and pour over pasta add salad dinner 2 is ready.

  7. I make a Greek pasta salad on hot days. Usually use the BBQ to grill up some hot dogs or sausages on the side (no bun). I cook tri colored rotini noodles, let cool or run under cold water. Chop green and red peppers. Cherry tomatoes. Some onion. Olives (optional). Add a brick of feta cheese. And toss with Kraft Greek feta salad dressing. Add salt and pepper to taste. Keeps in the fridge for a while too.

    1 sliced onion, 1 lb boneless chicken, 1 bag baby carrots, 6-8 medium red potatoes (or any potatoes) cubed. Layer in crockpot and pour a bottle of Italian dressing over top. Cook on low 6 -8 hours.

    BBQ blueberry pulled chicken sliders ( this is a weird combination, but it won at a 2015 blueberry festival in Burgaw, NC and my family and others absolutely love it) 2 lbs boneless, skinless chicken breasts (sometimes I use boneless skinless chicken thighs, or I’ll mix a couple of breasts and a few thighs),,,,1 cup of your favorite BBQ sauce (I use the G. Hugh’s No Sugar Added either hickory or honey flavored, cutting the carbs),,, 1/4 cup Italian dressing (I like it better with raspberry vinegrette),,,1/3 cup brown sugar,,,1 Tbs Worcestershire sauce,,, 1 cup fresh blueberries,,, juice of 1 lemon (strain out the seeds). Lightly spray Pam in bowl of crockpot. Place chicken in crock pot. Mix remaining ingredients and pour over chicken. Cover and cook 4 hours on high. Turn off the cooker and shred/pull chicken apart with forks. Let sit for 30 minutes. Serve on Hawaiian slider rolls or other favorite buns with coleslaw made with mayo, salt, pepper, and 2-3 packets of Splenda or a teaspoon or 2 of sugar. My family likes it with potato salad on the side.

  10. Make a big batch of pasta salad for the week! Pair with egg salad sandwiches or tuna sandwiches. Could go simple and just do meat cheese & crackers. Or even shrimp salad rolls with peanut sauce!

  11. Easiest crockpot meal for us is 3 boneless chicken breasts, season with salt and paper, cover in a whole bottle of bbq sauce, cook 8hr low and then shred. Can eat alone or on burger buns and do light sides, freeze leftovers.

    Crockpot lasagna or really anything in the crockpot. Personally I like to buy the Costco rotisserie chicken packages and make chicken salad with frozen grapes.

    I agree with chicken in the crock pot! You can use for taco salads, fajitas and tacos. Or baked potatoes in the microwave. Top with some steamed broccoli and shredded chicken with cheese. Or sour cream, bacon bits and green onions.

You can do chicken stuffing and green beans in the crock pot!- I use 2lbs boneless skinless chicken breast, a box of stovetop chicken stuffing, a can of cream of chicken soup, cup of sour cream, an a bag of fresh green beans. Put the chicken on the bottom with some slices of butter, (I usually do half stick cut up) layer the cream of chicken and sour cream over the top of the chicken, evenly, then add the dry stuffing and spread evenly. Top with the green beans and again spread it evenly. I like to add some salt, pepper, garlic&onion powder, then cook on high for 4 hours or medium/ low for 6-8 hours. Once it’s done you just mix it all together and the chicken will pull apart like butter!

  17. You can make meatloaf and potatoes in the microwave only way I fix mine turns out really good you can make a cake in an electric skillet I do that also

  18. Crockpot Premade frozen meatballs:
    1. Spaghetti sauce and serve on hotdog buns
    2. Teriyaki sauce over rice noodles or ramen
    3. Sweet & sour over rice
    4. Bbq with potato salad, coleslaw
    5. Brown gravy over mashed potatoes
    6. Buffalo sauce with mac & cheese

    Breakfast foods:
    – chaffles are omelets cooked in the waffle maker. They make good “bread” for sandwiches, burgers, blts
    – scrambled eggs and a grilled cheese
    – grilled peanutbutter& jelly sandwiches
    – chicken tetrazini
    – chicken nuggets cooked in air fryer with tater tots or coated in wing sauce

  19. You can do chicken tacos from the crock pot. Just throw chicken, seasoning, cut peppers and onions and garlic in with about 1/2c broth and 1/2c white wine or 1/4c vinegar and 1/3c brown sugar. Add pickled jalapeño if you want. All you need for it is wraps, lettuce and sour cream or guac and salsa.

    Also sweet and sticky meatballs they’re BBQ sauce, enchilada sauce, a little beef broth and sugar and your spices of chouce and homemade meatballs or store bought, on low 6hrs. Serve over rice.

    When you need one on a really hot day thaw and heat in microwave.

    4 chicken breasts
    1 pack of Taco seasoning
    1 big jar of salsa.

    Sprinkle taco seasoning on chicken, top chicken with salsa and cook on low 8 hours high for 4 hours. Serve in a tortilla, over rice or plain

  22. – cucumber boats: cut cucumber lengthwise, scoop out the seeds, pat dry. Fill with chicken, tuna, or egg salad, pimento cheese, cream cheese and turkey
    – fried egg sandwiches
    – fried Spam and eggs
    – grilled cheese sandwiches
    – grilled peanutbutter & jelly sandwiches
    – diced hotdogs or kielbasa in pancake or cornbread batter. Cook in waffle maker
    – hotdogs or kielbasa in sauerkraut with fried potatoes
    – scrambled eggs and avocado toast

  23. I like to do taco salad. Can cook up some ground beef or even easier… buy a rotisserie chicken. Mix with lettuce, beans, cheese, and crushed corn chips. You can also add corn, avocado, dressing, and whatever else you like 😁

  24. Limited cooking ideas!
    Stuffed tomato with chicken, tuna, or cottage cheese. We like a stuffed tomato with tuna salad and cottage cheese on the side.
    Also pasta (of your choice) bruschetta (tomato, basil, mozzarella) with a fresh bread.
    Chicken salad (rotisserie chicken, celery, grapes, apples, sliced almonds with Mayo alone or on a croissant or tomato!!
    And don’t forget the charcuterie boards!!

    Get grilled chicken strips and make wraps, pasta salad (involves a little cooking), fruit, chips, raw veggies, an/or salad of any kind.

    Grilled Chicken Mandarin Orange Bow-tie Pasta Spinach Salad
    with Teriyaki Dressing

    INGREDIENTS

    1 1/2 -2 cup cooked grilled chicken in bite size pieces
    8 ounces bow-tie pasta salad
    4 cups spinach leaves
    ½ cup craisins
    ⅓ cup cashews or pine nuts
    1 4-ounce can mandarin oranges, drained
    ¼ cup cilantro leaves, roughly chopped

    Dressing

    ⅓ cup teriyaki sauce (the thicker, the better!)
    ⅓ cup rice wine vinegar (may sub apple cider vinegar)
    ½ teaspoon garlic powder
    ½ teaspoon onion powder
    ¼ teaspoon salt
    ¼ teaspoon black pepper
    1 tablespoon sugar
    ½ cup oil (such as vegetable oil, canola oil, olive oil)
    INSTRUCTIONS
    Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
    While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.
    In a large bowl toss together chicken, pasta, spinach, craisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss, and serve.

  30. I just put new recipe I found on TikTok in the crockpot it’s called bittered beef tips …it’s 2lbs of stew meat 1pack of brown gravy and 1stick of butter onion is optional cook on low 6 to 8 hours serve over mashed potatoes and have a veggie…it looked good so Im trying it…

  31. Salisbury meatballs in one crockpot with mashed potatoes in another crockpot. Serve with premade dinner rolls. Quick, East, and so delicious!

    I get the bags of frozen grilled chicken strips, a bag of precut salad, and tomatoes and cucumbers, as well as shredded cheese, real bacon bit/pieces, croutons, and favorite dressing. I heat the frozen strips of chicken about 5 minutes either on the stove or microwave, cut into bite size pieces and put everything together for grilled chicken salad.

    The heat is awful. My go to right now is pasta salad. Add in some chicken and veggies or pepperoni. Doing chicken wraps tonight. To avoid the oven you can buy a rotisserie chicken and cut all the meat off and use that for meals.
