  1. Bubble and squeak
    Cooked potato (leftovers)
    Cooked cabbage (or any other leftover, cooked vegetables)
    Salt and pepper (to taste)
    1/2 tsp nutmeg (to taste)
    1 tbsp butter
    Mash up the potato and mix with the cabbage and/or leftover vegetables.
    Add salt and pepper to taste and a pinch of nutmeg. Shape the mixture into thick rounds using your hands.
    Heat the butter in a frying pan over a medium heat, then add the potato mixture.
    Press the cakes down gently but firmly with the back of a fish slice or spatula to help them brown and keep their shape.
    Cook for 3-4 minutes, until golden on the bottom. Flip over and fry until golden all over and cooked through.
    Serve with poached or fried eggs and Tenderstem broccoli, plus brown sauce, ketchup or hot sauce (whichever you prefer

  8. We still make Sunday Dinners a “big deal” so its “on your own” leftovers Sunday evenings! But tonight there is leftover steak, hamburgers, jello with fruit, corn on cob and walnut brownie sundaes with chocolate syrup…

  12. We usually roast a whole chicken but tonight we’re making chicken wings in the air fryer and having fresh beets with it
