My mom made this all the time growing up and now I make it for my family a few times a month:

Tamale Pie

1 lb ground beef
Taco seasoning
2 boxes Jiffy Cornbread mix
Eggs and milk for mix
Can of corn
Can of black beans
6 oz tomato sauce
Can of olives (optional)
Shredded cheddar

Cook ground beef, drain and add taco seasoning. Mix in drained corn, beans, tomato sauce, olives (optional) and whatever else looks appetizing.

Pour into a greased 13×9 inch dish. Top with as much shredded cheddar as you like. Mix the cornbread mix as directed on the box and pour on top of the taco mixture.

Bake at 400 for about a half hour or until a knife inserted in the cornbread comes out clean.

Super yummy and cheap. It’s sort of an “emergency meal” around here cuz I always have the ingredients laying Around.
