Jello poke cake is delicious and easy – make a yellow cake via box instructions in a 9×13 dish, as it cools prepare a regular box of jello according to the instructions (I do strawberry), poke holes with a fork into the cooling cake and pour the mixed jello over the cake. Then pop it in the fridge and top it before eating with cool whip and maybe even some fresh fruit!

I also like chocolate pudding pie – get an 8 oz container of cool whip, a graham cracker crust, two regular boxes of instant chocolate pudding mix and 1 1/4 cups milks. Mix the pudding, milk, and half of the cool whip together to make the pudding. Spread in the crust. Then make a layer on top of that with the cool whip. Then keep in the fridge until you’re ready to eat!

I like both of these for the summer because they’re easy and cold.

Brownie trifle. Layer with brownies, chocolate pudding, and whipped cream. The key thing to make it stand out is making whipped cream by hand with some confectionary sugar and a little bit of almond extract. Also, can later with crushed up pieces of health bar and some on top for decoration. One of my favorites.

    Pineapple Sunshine Cake

A light and fluffy pineapple-infused cake, topped with a sweet and creamy whipped cream frosting. This cake is always a crowd pleaser!

    Servings 16 servings

    Cake:
    1 box yellow cake mix
    4 eggs
1/2 cup oil (I used vegetable oil)
1 (8 oz) can crushed pineapple with juice

    Frosting:
1 (8 oz) container whipped topping, thawed
1 small box instant vanilla pudding
1 (8 oz) can crushed pineapple with juice

Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray.
In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.

Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.
In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!

    Notes
*I reserve a small amount of pineapple from the can used for the frosting to sprinkle on at the end. This is optional, though!

    1 container cool whip
    Graham crackers
    Chocolate frosting

-make vanilla pudding as directed on box, then fold in cool whip. Layer graham crackers in casserole dish, like making lasagna. Then put a layer of the pudding mix, then graham crackers, then pudding then melt the container of chocolate frosting and pour it on top, let it set in the fridge.

No bake cheesecake- 1 graham cracker pie crust- 1 block cream cheese – 1 can sweetened condensed milk- 1/4 lemon juice. Set out cream cheese to get to room temperature-Mix with handheld mixer until smooth- pour in pie crust- refrigerate for a few hours to set – can add a can of pie filling on top if you’d like- simplest, cheapest, no bake desert, in my opinion

    I call them fruit cookies.

Sugar cookies(I usually buy premade from store bakeries)
Fruit-strawberries, raspberries, blueberries, blackberries, kiwi, orange slices….any or all and any other fruit you like.

    1block of cream cheese softened
    Tsp vanilla
    1/2-1 cup sugar
Mix until smooth spread on cookie add any combination of fruit I sometimes leave fruit off a couple just in case. I’ve also done it as a cookie bar where the one eating it can add what they want (usually that’s with very large groups and a few dozen cookies)
You could add chocolate chips or nuts so many possibilities.
I always have people beg me to bring it to functions
    Good link and enjoy!

  23. I made chartini’s recently. I used dollar store 4/1 martini glasses fruits, cheeses, flavored crackers and some chocolate. With this heat if you’re indoors only I would use chocolate but you could mix it up and have the cups ready except for pre-scooped sorbet which you can add last minute.

I’m a baker I have many ideas. What does everyone like chocolate, vanilla, strawberry? Are you looking for something completely different? I have quite a few recipes I can share. Any idea what you might be looking for? Individual desserts like shooters or individual cups?

Carrot cake was always a hit at our family fish fries. I always used the better homes and gardens best ever carrot cake recipe. Use baby carrots and shred them on a grater. Makes the cake so much better than using full size carrots!!!!

    Make a fruit delight
1 or 2 cans of any fruit pie filling
1 or 2 tub of wip cream
    1 bag Marshmallows
1 block of cream cheese room temp
Mix all together. The 1 or 2 is if you need more stuff. Adding Marshmallows can some time make it stiff or looks dry
