    There is a stuffed zucchini recipe I saw on here the other day. It’s by cool it. I can’t figure out how to copy it to here. If you can find it it looks amazing. Sorry that’s not too much help.

  2. I cut up zucchini, summer squash, onion and tomatoes if I have them. Olive oil, Italian seasoning, garlic and roast for a while. I add grated parmigiana cheese at the end.

    With the leftovers I add beef chunks, beef broth and noodles for a soup. I will add some tomato sauce to depending on how many tomatoes I had.

    Steam it , let it sit until it cools and drain the water off , add a small onion , one can stewed tomatoes (drain off the juice/reserve ) place in oven or microwave pan and add cheese to the top and bake until cheese is melted OR microwave until it melts ..

    Make some homemade hibachi with onions, peppers, mushrooms, carrots, and chicken and rice. Sauté all your veggies in teriyaki sauce and dip them in yum yum sauce. Sooo good!

    Zucchini pizza boats. Cut the ends then cut long ways, scoop the seeds then salt and let sit for a couple of hours to pull the water out (so you dont burn your mouth as zucchini has high water content). Then fill the seeds cavity with any pizza toppings you want. Bake at 375 for 15-20 mins. Cheese should be melted. Let set for at least 5 minutes to cool and enjoy!

  7. Pizza zucchini is amazing and never have leftovers…I make my own tomato sauce but some use pre-made spaghetti sauce…topped with turkey pepperoni and cheese baked but for not long

    Saute sliced zucchini, yellow squash, onion and green tomatoes in a bit of butter and garlic till tender.

  9. I like to do zucchini boats! Buffalo chicken is good in them. I found a burrito boat recipe that’s really good! Chicken or tuna salad is good in them!

  10. I love chopping it up and adding it to pasta sauce with carrots. You can also slice, add pizza sauce, cheese, and a pepperoni and you’ve got zucchini pizza. Half, scoop out and put on n taco meat and bake.

    We cut them in quarters long ways drizzle with olive oil then roll in parmesan cheese, garlic powder, salt, pepper and Italian seasoning until well coated and put them on the grill until coating is golden brown.

  12. I found a low low carb sugar free bread recipe on Pinterest. Almond flour and sugar substitute. It is so delicious. My husband has diabetes and he can eat this guilt free

  13. Season and saute onions, peppers and celery then add garlic and stewed tomatoes. Simmer until vegetables are softened. Add zucchini and yellow squash if you have it. Great as a side dish, hot or cold, spooned over pasta ot garlic toast and sprinkled with parmesan.

Bake at 350degrees for about 30min. Keep an eye on them, they will look dried out when they are finished. It tastes good like that or with ranch in the side

    Cut wide strips of zucchini, lay them out so they slightly overlap, add cauliflower rice and your favorite sushi fillings, roll and enjoy. I suggest crab meat and spring onion for filling.

  18. I use it in my spaghetti, that way I use way less noodles. Or sometimes, no noodles and use the zucchini as the noodles. I also use lots of other chunky vegetables. I like my spaghetti sauce nice and thick, but I don’t like a lot of meat.
    I use half Ragu Sauce and half Prego Sauce for mine. I like both of those mixed together.

    Cook ground Italian sausage mix with cream cheese and seasoning I like to add oregano and sage, salt and pepper put in Zucchini boats and bake for 30 minutes at 400 degrees then add parmesean or mozzarella cheese (or any kind you like) on top and let it cook for a little long till melted

    Zucchini meatballs:
    Shredded, salted and drained Zucchini, feta cheese, eggs, parsley, parmasean cheese, white onions or green onions and pepper. Mix all together and form meatballs and fry in olive oil until golden brown. Drain on paper towels…and enjoy!!!

    Air fryer Parmesan zucchini….cube up zucchini, toss with olive oil and Italian seasoning. Then toss with Parmesan cheese. Air fry for 15 minutes at 400 or until golden brown…it’s delicious!

  22. I can’t wait to try the zucchini ribbon lasagna. Instead of shells or pasta, use long strips of zucchini, meat sauce, spoon onto and wrap, cover with cheese and bake.

    Zuchinni beef casserole!
    Brown 1lb ground beef with onion, mix with diced zuchinni + can of tomato sauce + salt + pepper + paprika + garlic powder + onion powder + chili powder + shredded cheese….put meat mixture in a casserole dish, add thinly sliced zuchinni on top, pour 1 can tomato sauce mixed with 1/2 cup water over the dish, add more cheese, cover and bake for at least an hour. You’re supposed to add bread crumbs to the meat mixture but since you want low carb, I’m sure you can leave those out and it will still be amazing!

  24. Boats, can basically fill them like a stuffed pepper recipe

    Cut them into sticks and bake them with a little garlic salt and parmesan cheese and just eat them like that

    Zoodles, replace noodles in Spaghetti

    Use in soups and sauces to add more veggies

    Fritters, or hashbrowns, grate them up and add to fritters or mix with grated potato for a healthier hashbrown

    Can use them in healthy brownie recipes

    Dice it up add to cooked hamburger, add water and cook till the zucchini is tender. Drain and then add cheese. It’s a family favorite.
