Just looking for 2 people meal ideas!😑 My Boyfriend and I are tired of eating the same thing every week. I normally have about 2 hours before we both head to bed. I just have a terrible time finding different meals to cook!

    I usually take 1 day n make 3r4 meals or fry up 4lbs ground beef then i can use that for sloppy joes tacos rigatoni spaghetti stuffed peppers egg rolls cheese burger pie

    I put a frozen roast in my crockpot about 9:00 last night on low. We ate at 3:00 today!!

  4. Buffalo chicken dip quesadillas
    2 cups chicken
    8 oz of cream cheese
    1/2 cup ranch
    1/2 cup shredded cheese
    1/2 cup franks red hot I had more cause I like it spicy 🌶
    Mix it all together throw it in a tortilla and there ya go the best! Only takes about 10 minutes too!

  6. Pizza chicken
    Split chicken breast and season with Italian seasoning and garlic salt add mozzarella cheese and pepperoni then close add more cheese and pepperoni then cover with spaghetti sauce and bake til done then serve with your choice pasta

  7. Teriyaki chicken. Cut chicken breast into chunks and brown. Add onion green pepper thinly sliced carrots and pineapple chunks. Top with teriyaki sauce and simmer until veggies are tender. Serve on rice or ramen noodles with a side of broccoli.

  8. Taco pasta/rice casserole. Brown hamburger with chopped onion and green pepper add corn and black beans both drained and a can of rotel tomatoes. Add cooked noodles or rice chopped cilantro and a can of fiesta nacho cheese soup. Mix and bake in a greased casserole dish until hot and bubbly. Add cheese on top and bake until melted. Cut up chicken breast works too.

  9. Mexican lasagna, for this dish you pretty much can put anything in it that you want. I like to make mine in an 8 or 9 in cake pan. That way you’re around flour tortilla fits exactly in it.
    Make your taco meat however you like. Sometimes I just use plain Taco meat, sometimes I will add black beans and corn to my meat. Generally it goes flour tortilla refried beans spread across the tortilla, then my meat, and then cheese. Repeat until you have three layers, top with another flour tortilla. Bake in the oven 350 degrees for maybe 20 minutes. You’re essentially just heating up the beans and melting the cheese. Sometimes I will add a Mexican rice to it but I found that usually works best if I mix it actually into the meat mixture that way the cheese can hold it together better. Serve it with some sour cream and salsa maybe some guacamole. Great dinner and it reheats nicely for lunch the next day

  10. Get a crockpot, make double batches and freeze one for another time when you don’t want to cook.
    Buy a pound of sliced Turkey or a pound of roast beef, heat in a jar of gravy and serve over mashed potatoes, noodles, rice, or bread. Serve with your vegetable of choice or salad. Prep a week worth of crockpot meals in gallon ziplock bags and put it in the crockpot before you leave for work.

  11. I get meals on wheels and it comes with a month long menu. My neighbor borrowed one for inspiration. Senior centers advertise their menus so that may give ideas for you

    I do freezer bags with
    -precooked sliced or diced chicken, add in veggies.
    – crackpot soup fixing
    – spaghetti meat sauce
    – cooked chicken, ground beef, steak, ground turkey with Italian or taco seasoning.
    Then all you have to do is prep a bun, tortilla, French roll, pasta, potato, or rice. And just reheat ADD INS and ya got a meal.
    Spaghetti stuffed biscuits with garlic parm herb butter on top is hubby’s fave.

    Meat Roll-ups.
    Take a slice of meat, put a little cream cheese, either cucumber, or onion, or bell pepper (or all of the above) guacamole. Roll it up and serve with chips. Easy, cheap, delicious and healthy. You can make up your own. I use hummus some too.

  15. Meat turnovers…baking mix(jiffy,Bisquick, etc) mix as you would for biscuits, except add a little more or flour to make it a bit dryer so you can roll out about 1/8 in. Roll out and cut …fry hamburger with onion and seasonings , I like mushrooms too. Drain. Fill squares and fold over. Seal tightly poke top with fork. Bake 350 for 20-25 min til golden brown. Serve with gravy …another idea after frying hamburger and draining add gravy put over home cut fries, rice, noodles, or mashed. Other ideas… Stroganoff ..sloppy Joes, mock Philly steaks, stuff peppers or soup…
    Spaghetti and eggs….no sauce
    Saute spaghetti in butter add choice of seasonings, I like garlic powder blackened seasoning and pepper. Scrambled eggs pour over pasta toss to coat and cook. May need to add more butter. I like to Saute mushrooms and peppers in it. You can add chicken shrimp or crab meat too. Make it your own…salad. Or
    Just regular toast goes good with it. Sprinkle spaghetti cheese on it… So good…
    Or turn the pasta into pasta salad…tomatoes, dukes, chunks or cheese and pepperoni Italian dressing salad Supreme
    Slice kielbasa and saute with peppers, onions, mushrooms in butter and garlic (can add Frank’s Sweet Chili sauce or sweet and sour sauce) put over rice or noodles. I like to make gnocchi and mix it in with it. Pieogies are great too.Any kind of meat can be used in above recipes. Tweak it Make it your own.
    Roasted with some veggies…
    Cut potatoes sweet potatoes onions peppers zucchini yellow squash mushrooms toss with seasonings and oil . Roast 400 for about 25-30min tossing in between….

    For something super simple and easy… Buy a box of the frozen Texas Toast garlic bread… the knockoff usually comes with 8 slices. Take 4 out, lay them on a baking sheet. Spread on some pizza sauce, Sprinkle finely shredded mozzarella cheese, and add pepperoni slices. Bake in the oven at 400° for 7 minutes!

  17. Make a meatloaf only cook half or a fourth of it. Put rest in freezer for another easy night.
    Same with many other meals that are freezable

    I use to cook normal meal size. We , the two of us, would eat and then divide leftovers into single servings and freeze them. A couple I use to know would cook seven different meals on Sunday. They would keep two to three days worth in refrigerator and freeze the rest.

  20. It is much easier if you have meat already cooked and frozen you can take it out and do whatever you wish stir fries, hot sandwiches ,rice meat &vegetables, meat ,gravy & Vegetables it’s so much easier when the Meat is cooked and in the freezer To decide what you want to make

  21. Get a crockpot. Start it up in the a.m. and it will be waiting for you to eat when you get home. Here’s one: 4 chicken breasts (better if browned before putting in the crockpot, but I’ve done it without browning), add one can of black beans, one can of corn, and 1 container of your favorite salsa (better if it’s fresh). Add seasonings (taco seasoning, or even just chili powder, salt and pepper), and 1 cup water. Low for 8 hours. In the last 30 minutes, (I guess this would start as soon as you are home in the evening), shred the chicken and then add one block of cream cheese and turn to high. After 30 minutes, stir it to make sure the cream cheese is blended in. Serve with tortilla chips. And with just 2 people, this should made 2-3 dinners.

  22. Coconut curry chicken and rice. Cut into chunks and brown a boneless chicken breast or 2. In a medium sauce pan add 1 can coconut milk use can to measure 1 can of water and 1 cans of rice. Can of corn drained 2 tlbs butter and curry to taste I use a tablespoon. Add in chicken bring to a boil stir cover and simmer until rice is tender about 20 min. Add some dried red pepper flakes I for some spice.

    I have the same thing on weeknights:
    I try to prep Sunday night for things that can be made later in the week like chicken pot pie filling. I’ll put that together and bake it on Monday night, that will feed us dinner and then lunch for a couple of days.
    Tacos are quick and easy, and you can prep the meat and veggies in advance. We usually have extra meat and it freezes really well for another meal the next week or for omelets on the weekend..
    We really like polska kielbasa ring sausage sliced up and fried with green and/or red pepper and onion, pepper and a little bit of salt for a quick, easy and cheap meal. We probably have it once a week.
    My husband really likes frozen pizza, so we have that with a salad, but honestly, I usually have the salad and he has pizza…
    And then I will do something in the crockpot once a week, like pork chops or a roast.

  24. 1 pk rice (any flavor but Spanish or mexican is my go too)
    1 onion
    1 pepper
    1 tbsp garlic
    Salt
    Pepper
    1tbsp Italian seasoning
    1 large jar of salsa
    1lb of ground meat
    Enough stock of any flavor to cover….. sauté meat then drain, add veggies rice salsa and stock. Usually 30-1hr cook time depending on the rice.. once rice is tender cover in shredded cheese

    Someone else posted this but can’t remember what group. I made it today and it was really good. I didn’t make anything else to go with it besides the yellow rice. I bought a Mexican flavored yellow rice.

    SantaFe chicken

    (4) chicken breast’s
    (1) red bell pepper chopped
    (1) can black beans drained
    (1) can Mexican corn drained
    (1) can hot Rotel tomatoes
    (2) fresh jalapeños sliced
    (5) cherry tomatoes sliced
    Mexican cheese
    Salt, pepper, cayenne and chili powder
    Rub chicken breasts in olive oil, season with salt, pepper, cayenne pepper and chili powder. Place in casserole pan. Top with black beans, corn, Rotel tomatoes, bell peppers, tomatoes and jalapeños. Bake at 375 for 1 hour 15 minutes. Top with cheese and bake an additional 15 minutes. Serve over yellow rice.

  26. Brown a pound of hamburger and drain grease. Set aside. Make 1 box of Beef Ricearoni. Add seasoning, one package of Lipton onion soup mix, a bullion cube (beef) a few dashes of worstershire sauce and the cooked burger. Allow it to boil as directed for ricearoni. Can add peas and carrots to it. Very good!

    No peek beef tips. 1# stew meat, 1 can of cream of mushroom soup, 1 pack of brown gravy and 1 pack onion soup mix plus 1 can of water mix altogether put in 9×13 pan cover with foil bake on 300 for 3 hours serve with noodles, rice, mashed potatoes and a vegetable. Delish

    Stromboli. I use the Wal Mart pizza crust packets for the dough bc it’s so cheap n easy. But could do home made or refrigerated ones. I use thin sliced lunch meat n chez. Quesadilla are also quick n yum. Flour tortillas n filling of your choice…. unlimited choices so can change it up / use what ya have on hand. Great for repurposing leftovers.

    I found it really hard to cook for two people but grill up some pork chops, with a nice garden salad with fresh veggies. Cut some peaches(they are in season) in half put a little brown sugar in them put them in the grill sugar side down and grill them until soft. Nice compliment to port and the sweet tooth-

  30. Buy a rotisserie chicken at the grocery store. Bring home and cut up into small pieces. Can be used on flour tortillas with salsa and shredded cheese, can be used on bread toasted and put gravy you buy in a jar on top and heat in microwave.

  32. On your day off, cook big and freeze portion sizes for meals!! Big pot of spaghetti sauce, should have 3 or 4 meals to freeze. Bake a whole pack of thighs, seasoned heavily with lemon-pepper and covered in 2-3 cans cream of chicken soup with water mixed with envelope of chicken gravy. Put 2-4 in freezer bag with plenty of the gravy–servd over rice.

  33. French toast and breakfast meat. Can be made ahead, frozen or refrigerated ffg or a few days. heat the French toast in the toaster oven or air dryer and microwave the meat. Serve with fruit or juice. Breakfast for dinner. Can do the same with pancakes.

  34. Get a crockpot! Lots of great recipes to try and will make great leftovers, to help you even more. Our favorite is a

    Mississippi Pot roast:
    2lb chuck roast
    1 pkg Hidden valley ranch mix
    1 pkg au juis mix
    1 stick butter
    5-6 peppercinis

    Put roast in crockpot. Cover w ranch powder and au juis powder. Put stick of butter on top and set peppercinis around. Set on Low for 8hrs. *meat will shread apart – I pull any fat chunks out and stir meat around in au juis drippings. Serve on a hoagie w provel cheese OR on a bed of mashed potatoes (we use Bob Evans microwaveable to save time). Makes great leftovers for 2 days of meals!
