I have a bag of farm picked tomatoes all about the size of golf balls. They’re almost too ripe right now. What is something simple I can do with them to make sure they don’t go to waste.

  1. U can.do canning and would be good for long time perfect to make lots of salsa spaghetti sauce homemade ..save money in long run you can even can left overs ..time comsuming but money saver!!

    Homemade salsa or tomato pie use a lot of tomatoes quickly. Just ideas, unfortunately, I don’t have recipes to share but they are common so maybe you can “Google” some.

  3. Bruschetta. Or,
    Roast until they burst, add to pasta with garlic, olive oil cheese and spices.

  4. Concasse. You cut slits in the skin. Boil then submerge in ice water peel the skins. De seed. Freeze in chunks. Concasse then make salsa or pasta sauce.

  5. Roast them in the oven as a side dish. Toss in olive oil and seasonings and roast at 425° until skins start to blister

    Slice them and put them on a cookie sheet. Sprinkle with Italian seasoning and shredded cheese. Put in the oven on 400 for 20 minutes

  7. Put them in a bake pan drizzle with olive oil, Italian seasoning and add a block of feta. Bake 30 min at 425…stir and eat of pasta. Add chicken if you have it. And maybe red pepper flakes

  8. I blanch them, remove the skins, then freeze for soup or any other recipe calling for tomatoes.

    Roast them in the oven with olive oil, onion, garlic, black pepper and fresh basil, oregano or whatever fresh herbs you may have. I use them in soup

  10. Wash them lightly, let then dry and then freeze them. When you make soup in the winter, run them under hot water. The skin will pop off and you have a stewed tomato

  11. Make a homemade soup mix by adding a few veggies & diced potatoes. boil , jar & pressure cook. In your canner. Great in the winter just brown some beef & some onion & add your soup mix & a little more broth or bouillon & water.

    Marinated tomatoes, chop some up and add lots of garlic and oregano, some salt, oil and balsamic vinegar if you have. So good on chips, toast, meat, burgers, sandwiches.
