Chop them up and freeze for use in breakfast potatoes or for breakfast burritos. There is a potato chicken ranch bake thing on pintrest that is delicious. Potato soup, you can use frozen cubed potatoes for stews and soups . All kinds of things

Make mashed potatoes (my favorite are garlic) and FREEZE. I did this when I was pregnant to kind of meal prep and it helped a lot, they keep forever.

Slice potato longways and scoop middle of potatoes out (leave about 1/4-1/3 of an inch on potato attached to the skin—you want to be able to pick it up without it falling apart.)
Put the inside potato guts in a bowl and mash with your desired ingredients (milk, butter, seasoning, cheese, bacon, etc.) and spoon or pipe the filling back in the potato shells. Bake 350 until warmed through, can be topped with cheese at the end of bake time. Top with sour cream and green onions when done, or anything you like.
I like to make broccoli, onion and cheese sauce for baked potato topping.
Topping with homemade chili is good, too.
BBQ shredded pork is delicious as well.

Potato soup, shred for hash browns, hash brown casserole. Cube for home fries, get them real crispy in the air fryer. Keep them as baked potatoes and top with broccoli and load them up with all the normal baked potato toppings. BBQ is also soooo good on a baked potato. Slice them thin, with the skin left on, let them dry for a while, and fry them (or air fryer) with some onions and peppers. I love potatoes, I will eat them any kind of way that there is 🤣

I regularly bake too many potatoes on purpose. Chop some up, add onion, jalapeno, cooked ground sausage. Make that into breakfast burritos, or cook eggs on top for delicious breakfast hash.

Maashed potatoe casserole. Gut out like you would for twiced potatoes add to mixture french fried onion. pour in casserole dish. Top with cheese and French fried onions and bake….. air fry skins with lil olive oil and coarse salt rubbed on Skin . Makes potatoe chips.

I had a ton of backed taters a while back. They freeze well. Make different kinds of backed taters, like Broccoli and cheese or chili chili baked potatoes and then just freeze them then you’ll have your lunch meals already made
Hasselbeck potatoes they are so yummy just cut them not all the way through and slices put them on a cookie tray based them with oil or butter doesn’t matter season how you want put them in the oven they’ll come out kind of crispy and soft and oh my goodness so good
Stuffed! Slice those babies in half and fluff them up however you want. Bake again if desired or leave as is to bake as frozen. Then freeze them ss twice baked potatoes. We love this as a prepped meal already!!

So I make potato cakes left over mash potatoes or baked potatoes work just mash them up (egg cheese salt pepper a little garlic salt ) make into pattys and then add a little olive oil to pan and fry to golden crispy or u could freeze until u decide u want them for breakfast or any type of meal

Potato pancakes. Scoop out all the potatoes from the sleeves. Mix with an egg or two to bind, a little bit of flour, and drop by spoonfuls into a shallow frying pan with oil. Pan fry until golden on both sides.
Cut up the potatoes into bite sizes in a baking pan with velveeta squares, Italian dressing, onion & some seasonings and bake them! 🤤

Slice up and layer 9×13 greased pan. Slices, cheese, bacon (if you want), slices, cheese and bacon. Cover with tin foil and bake 15min.

I made home made tater tot’s once and they were the best! I shredded them, added salt and pepper and fine shredded cheddar cheese. Mix together, form into tater tot shapes and fry them. It felt like a lot of work honestly, but they were amazing

You could freeze them ! Put in airtight containers. Use from 1-3 months. They will still be good longer, but the texture starts to break down.
I always “bake” in microwave before I make home fries or fried potatoes because they cook so much faster and crisp up so nicely 🙂

Congratulations! Here’s a thought. If you were going to do a large brunch event for some reason, those leftover baked potatoes make excellent country fried potatoes with onions. Some bacon, some biscuits and gravy, some scrambled eggs and some sliced fresh tomatoes! Wow. I think I’m hungry!
