potato soup… i had no meat but lots of potatos.. and bacon grease that was just sitting there.. so i cube my potatos… some celery some onions.. i think carrots? put it all into a pot and boiled it to death with that bacon grease and some boullion and some spices.. was the best soup ever…

I peal up the whole bag. A portion I make into French fries,rinse and bag for freezer.
The rest I quarter ,rinse and boil.

They go well with kielbasa or smoked sausage which could also be tossed right on the same sheet w the potatoes & roasted at the same time.
