My husband makes eggs and potatoes. Fry your potatoes add eggs scramble with mushrooms, peppers, onions, and cheese or what ever you want to add to it. Sometimes I add salsa on top.

I peal up the whole bag. A portion I make into French fries, rinse and bag for freezer.
The rest I quarter ,rinse and boil.

    Peel, cube , sprinkle with
    1/2 tsp salt
    1 tsp garlic powder
    1 tsp paprika
    Some diced onion
And roast them in the oven. I throw on some shredded cheese at the end & let it melt.
They go well with kielbasa or smoked sausage which could also be tossed right on the same sheet w the potatoes & roasted at the same time.
