    I make a cucumber salad just cucumbers I do 4 English ones sliced red onion sliced very thin a very good Greek extra virgin olive oil and balsamic glaze toss with salt and pepper. First thing to go so refreshing. My granddaughters also like to dip them in ranch dressing.

    You could also make a pasta salad and throw the cucumbers in it too that tastes really good I love that cucumbers are like one of my favorite summer vegetables I always have cucumber plants going and they go with almost any kind of meal you make in the summer especially barbecues

    Cucumbers, tomatoes and red onion chopped up. Mix mayo to coat. Add salt and pepper. Cover and refrigerate for a few hours. Yummm

  14. Thinly Slice cucumbers and sweet onions. Salt it and let drain in colander for 30 min. Meanwhile boil equal amounts of water, vinegar and sugar. Place cucumbers and onions in hot vinegar mix. Add a little pepper and dill. Refrigerate. Serve cold.

    I like this very simple recipe. slice cucumbers very thin. Add some mayo to them. Not much, just enough to coat them. Add mustard, salt and pepper. Stir well. Chill. Stir again before serving

  22. Look up Asian Cucumber salad it’s so tasty. Typically it’s salt, pepper, cider vinegar, garlic, sugar, chili oil or some type of chili powder. It’s a twist on a favorite. I sometimes pick some up from a restaurant near by because I love theirs so much to have as a side with my home made meal. It’s easy to make as well just have not been able to totally duplicate their recipe.

    Some also have soy sauce as well.

    Grate your cucumbers up , make the green jello but add whipcream instead of hot water and add your grated cucumbers also.. let it set…delicious!!

    Our cucumber salad recipe: 3-4 cucumbers thinly sliced, orange and yellow bell pepper diced, 4-5 Roma tomatoes diced, and red onion diced. Put all veggies in a large bowl and add bottle of Italian dressing. Let sit for at least an hour in the fridge.

  29. Scoop middle out cucumber & slice, put in colander & sprinkle with salt, leave for 15 mins, rinse lightly & dry. Add halved baby tomatoes, 1/4 a red onion & slice thinly. Juice of 1/2 lemon, 1 tsp chopped fennel, 1/2 crushed garlic clove & olive oil, shake & toss through. Can also be mixed through couscous just add lemon juice, fennel & garlic to couscous.

    I do cucumbers, halved cherry tomatoes, red onion then add ranch seasoning powder. Let it sit for a little bit.

  36. You can also slice them, put them in a shallow dish, add lime juice and add Tabasco sauce or Tajin. Place in the fridge so it can get cold. and serve as a cool down snack.
