Hey everybody this may not be the right group as the budget isn’t the main focus…

Hey everybody this may not be the right group as the budget isn’t the main focus on this weekend. We’re hosting and do it right.

My wife’s invited a co-worker over for weekend hang out. Very casual but she is a vegetarian. So I’m trying to come up with a couple good meals to put together.

I’d love tips or favourite veggi meals.

    Ratatouille. If she eats cheese you could do caprese salad stuffed in a portabello mushroom. Tofu tacos.

    Pasta with marinara or pesto, penne ala vodka, risotto, garlic bread, all go well with veg and non veg alike.

Our vegetarian family members favorites for appetizers 1) a nice veggie tray with olives and hummus (or you could do another dip) or 2) a hot or cold spinach and artichoke dip with crackers or a crusty bread. Some of their favorite meals include: 1) Fettucini alfredo with homemade sauce and oven roasted veggies or a nice green salad, 2) veggie topped pizza – I just use a frozen cheese pizza that we know is good and cover it with a layer of a really good ranch or blue cheese dressing then top it with your choice of veggies such as spinach, fresh or sun dried tomatoes, cooked (oven roasted or steamed) chopped broccoli, peppers, onions, mushrooms (fresh or canned), then more cheese over the top. Or, 3) my son’s personal favorite, “chicken: wing pizza – bake a frozen cheese pizza until have cooked. While it bakes, cook 2-3 frozen vegetarian “chicken” patties as directed or in an airfryer. Or just toast in the the toaster until heated thru and crispy on the outside. Chop patties into small pieces, toss with a generous amount of your favorite chicken wing sauce (we use Franks) or, for a bbq pizza, use bbq sauce or a combo of wing and bbq sauce. Spread sauced patties over the half baked pizza, top with more mozzerellla cheese or another mild cheese. Finish baking. 4) we have created a vegetarian version of a family favorite that they love too – mexican cream cheese chickpea (instead of chicken) wraps. Rinse and drain 1 can of garbonzo beans, break up the beans in the food processor or by hand (this is quite a work out by hand) until all beans are broken but still chunky similar to cut up or shredded chicken. Mix in 4 oz. softened cream cheese and 1/4-1/2 cup salsa or picante sauce. Stir in a little cumin. Mix in 1-2 cups shredded cheddar or other cheese. Taste the mixture and add more cumin, cheese, or salsa if needed. Fill flour tortillas, roll up. We often double or triple the recipe. Can be made ahead of time and kept in the fridge until serving time. Delicious cold or hot. For an appetizer, you can make them into pinwheels. These are great for several days if kept in the fridge so any leftovers can be used for another meal. If you have any left! You can do it! Have fun!

    Our vegetarian go to meal is impossible burger meat seasoned as a gyro, fresh taziki, humus and pita. And a cucumber salad.

    Do you have a smoker? If so, throw an eggplant on to smoke for a bit, then make smoked baba ganoush. It’s my favorite vegetarian dish!!

    Have your wife ask if she has anything she won’t eat other than meat. Some vegetarians are completely different and won’t consume dairy either.

  20. I have two daughters who are vegetarian, and I eat whatever they eat usually. We found that we like the impossible burger brand and garden be’f. We make tacos, hamburger helper, chili, whatever. 🙂

    Fettucine Alfredo with broccoli is a favorite here. Also zucchini Parmesan, eggplant Parmesan, spinach lasagna, and pizza with peppers/onions/black olives/mushrooms.

    Roast a whole cauliflower! Veggie pizzas try some new different toppings (I usually look up a bistro menu and get ideas of things that go together, then make at home)

    We aren’t vegetarian but love these dishes & so do our vegetarian friends

    Grill corn, red peppers, red onions, asparagus, zucchini, yellow squash enough to get good grill marks. Chop & toss in a nice vinaigrette with fresh herbs & top with crumbled blue cheese.

    Greek orzo pasta salad

    Boil orzo in salted water, strain & rinse cool with cold water. Add fresh spinach sliced in ribbons, thinly sliced red onion, Greek dressing, crumbled feta cheese, olive oil, red wine vinegar, salt & pepper to taste.

    Corn salad

    Several cans white shoepeg corn, diced tomato, chopped green onion, mayonnaise, salt & pepper to taste.

    Cut the stems & tops off
    Boil in salted water or water with white wine for about 40 mins, pull out with tongs & drain out liquid, turn over and pull apart then sprinkle with Italian bread crumbs (we usually add fresh or dried Italian herbs) drizzle a good amount of olive oil over each artichoke then bake in oven @ 350 for another 40 mins.

    If you have a Trader Joe’s near you the veggie nests in the frozen section are to die for in the air fryer & come with a soy dipping sauce. Quick & easy.

    Grilled cauliflower steaks with a Greek yogurt dipping sauce (we like to add the green Tabasco & golden raisins)

    Spinach or baby mixed green salad with roasted beets, pecans, goat cheese & a vinaigrette (we like to make our own with olive oil, muscadine jelly, red wine vinegar, S&P to taste)

    Broccoli & cheese quiche or artichoke & spinach quiche. Eggplant parm. Veggie stir fry over Cantonese noodle nests. Stuffed mushrooms, veggie based curry, cabbage soup, pasta primavera, fajitas but replace meat with portobello mushrooms, loaded sweet potato fries,

    Stir fry with rice, salad, spaghetti with no meat or any pasta with sauce and veggies, acorn squash is so yummy, veggie soup. There are soooo many plant based foods and veggie foods like burgers, hot dogs, chicken nuggets (I know it sounds dumb) you can use the veggie nuggets and make a chicken salad out of those. Baked potatoes topped with cheese and broccoli.

    Stir fry, you can add meats that others can add in on their own

    Quesadillas or a fajita bar… Again build their own so they get what they comfortable with.

    Eggplant parmesan. But ask 8f they eat cheeses? Some are very strict.

    Homemade spinach ricotta canneloni is easier than it sounds! I used chopped frozen spinach(thawed and squeezed well),barilla no soak canneloni tubes and mixed the tomato sauce together cold then baked for 30min at 375f. Salad and some garlic bread and you have a great veggie meal

    1. Vegetarian shepherds pie. Can use lentils or mushrooms or a combination of both
    2. I had a root vegetable pie with cheese and tomato in it at a friend’s wedding once (she is vegetarian) and holy crap it was so good. I would look up a recipe for a root vegetable pie and ensure there is cheese and some tomato (not a lot needed). Crust on both the top and bottom. Thin slices of the root veggies. There were also some squashes in there like zucchini and yellow.
    3. Veggie lasagna! Can do a little fancy and do an alfredo sauce (can make it homemade w cream and parmesan if feeling real fancy). I personally like mushrooms and spinach in my lasagna.

  28. My daughter has been doing something called the Daniel Fast. She’s made some very good things? Fried rice using brown rice and a lot of vegetables. She also made a vegan shepherds pie that was delicious! Used lentils instead of ground beef.

    Spinach lasagna with garlic bread and salad. Tiramasu for dessert.

    Eggplant Parmigiano with pasta, salad and garlic bread. Italian cream cake for dessert.

    Portabella mushroom burgers. Serve with sweet potato fries, cole slaw and strawberry shortcake.

    Red beans and rice with cornbread and fried potatoes dredged in flour. Bread pudding for dessert.

    Stir fry with veggies and tofu over white sticky rice with spring rolls and fresh fruit for dessert.

    Falafel pita sandwiches, mozzarella and tomato salad and baklava for dessert.

    Stuffed peppers use mini peppers to make it an appetizer or bell peppers for an entree. I put sausage in mine but can easily make vegetarian. Dice and saute carrots, zucchini, yellow squash, mushrooms and chickpeas. Season and add cheese if you like. Cut off just the top of the peppers and scoop out seeds. Stuff the peppers. Bake in oven about 350 until peppers start to soften.

    Pizza can very easily be made vegetarian. Lasagna as well as most pasta dishes. I shared a zucchini pie recipe earlier that is fantastic and can easily be made with vegan products. Also egg plant lasagna is delicious, there is alot of tomatoe bakes that are good and easily vegetarian. Grilled portabella mushroom caps are fantastic. Also there is alot of sushi options that is pure vegetable options! My advice is find out what they are okay with eating. Something like cheese or egg maybe something they are ok with eating or they may not. That’s where good vegan based products are easily substituted.

    Mushroom caps, made with spinach, artichoke hearts, peppers, etc and cheese of course.
    Appie platter, cheese assortment, crackers, nuts, pickles, olives, veggies and fruit. Chips and salsa. Specially in the heat, no cooking.

  33. A southern soul type meal sounds great !! Make 4 different vegetables and a cornbread.lf l was doing it, I would probably do some kind of potatoes ( creamed, stewed, b as ked, sweet or white), some kind of greens (turnip, cabbage. Spinach, broccoli, asparagus, or green beans), carrots or corn (on or off cob), and a salad or sliced tomatoes.
    Baked apples (butter, sugar and cinnamon ), jello salads, or a pudding (esp bread pudding) would be good.

    I also do plant based health reasons. Can be done in a crockpot. Also have added Boca crumbles and kids don’t know difference.

    I love stir fry veggies with onions, french green beans, celery, bok choy, snow peas, bean sprouts, I put them all in a Wok, with just a little olive oil, then i add water chestnuts when its done and put garlic and onion powder in when cooking it then add soy sauce, it is so delicious Kevin S and I also add chow mein noodles or she can put it over rice
