Dinner tonight is Lazy Enchiladas. And as a side we had grapes, strawberries, and apples with homemade fruit dip. The fruit was cut age appropriately! Plate pictured was is my 2 year old daughters plate of lazy enchiladas

Lazy enchiladas recipe:
A box of taquitos
A large can of mild red enchilada sauce
And shredded cheese

Add taquitos to the baking dish cover with red enchilada sauce and top with shredded cheese. Then bake on 350 for 20 minutes!

    What’s a good enchilada sauce to use? I usually can only find canned ones and they have a metallic taste and are too spicy

    I’m so lazy I would just heat up the taquitos and be done. Haha!
    How did you make the fruit dip?

  3. Add refried beans to the bottom of the casserole dish then add the other ingredients 😋😋

  4. What is fruit dip? I use strawberries, apples and peaches and just toss it with a dab of cinnamon and sugar so I’m excited to hear of this dip!!

  6. Fresh fruit/fresh veggies as a side on summer days is superior to almost anything. Especially when they’ve all been chilled to perfection 🤤🤤🤤 Now I want some too 😭🤣
