    Italian Cabbage

1/2 green cabbage (thinly sliced or shredded)
    1 large onion (thinly sliced)
    1.5 tbsp tomato paste
    1.5 tbsp fennel seed
    2 tsp smoked paprika
1 tsp liquid smoke (or to taste)
*** If you don’t have any liquid smoke just up the smoked paprika by 1/2 teaspoon or so to your taste then get some liquid smoke in that pantry.
sea salt + black pepper to taste
15 oz can canellini beans (drain and rinsed)
1 pinch red pepper flakes (optional to taste)
    olive oil

Preheat a large heavy bottom skillet over medium heat and add a good lug of olive oil.

Add the sliced onions and a pinch of sea salt. As the onion starts to soften and release its water content turn up the heat so the liquid evaporates and the onion starts to get some color.

Pan fry the onions until nicely golden with crispy edges. Stir in the chili flakes if using. Add 1 tablespoon of the fennel seeds and toast with the onion until fragrant.

Stir in the smoked paprika and tomato paste and cook for a few minutes until the sugars begin to caramelize.

Add the shredded cabbage, season with a pinch of salt and black pepper then mix everything well, scraping any brown bits from the bottom.

Stir in the liquid smoke if using and cook down the cabbage until wilted and softened and the sugars start to caramelize again on the bottom. You want little golden bits only so be careful not to burn it.

Push the mixture to the side and add a light drop of olive oil to toast the remaining fennel seeds and infuse a new layer of flavor into your dish.

Stir in the cannellini beans and toss to coat well. Cook only until warmed through. Adjust seasonings and serve with fresh parsley or dill, fresh bread or bruschetta.

    Cabbage and Vegetable Soup

One or two bottles low salt V8 juice for the stock
Half a head of cabbage chopped up
(Or 1-2 bags of coleslaw mix)
Two bunches of broccoli chopped up
A third to a half a head of cauliflower chopped up
Half a bag of frozen green beans
A third of a bulb of anise that’s also good to eat by itself raw for a snack
Three carrots peeled and chopped up
Three celery stalks peeled and chopped up
    One onion chopped up
And any other low calorie vegetables that you like
If you need more liquid you can add either water or chicken broth low salt or small can(s) V8
This is a great weight control soup as well as sodium controlled
Use your favorite spices that do not have salt in them.
If you like mushrooms you can slice those up and add it to it as well.

    NE Boiled cabbage dinner

    In very large pot:
3# corned beef, bring to a boil and cook simmering in enough water and/or chicken broth to cover meat 3+ hours until tender keeping it covered with liquid the entire time then take out of the pot and trim and cut up to desired size pieces then put back in liquid and add:
1 head of cabbage cored and cut into wedges (or 1-2 bags precut coleslaw mix)
4-5 carrots peeled and cut into bite size pieces
4-6 potatoes peeled and cut up (or baby potatoes)
1 – 2 onions cut into wedges (optional)
    2 turnips cut up (optional)
Several yellow beets to taste (optional)
If needed add more liquid and
    Cook until vegetables are done

Variation: instead of corned beef when vegetables are all cooked slice up a can or two of spam and put it on top to heat for the last 10 – 20 minutes. I serve in bowls with lots of the juice per serving. You can also use ham.

Serve with a few splashes of vinegar & butter, or mayonnaise, and pepper. I don’t add salt because the meat is salty enough. But salt is still optional according to your taste
